Peanut Butter Jelly Roll-Ups

Today is National Peanut Butter and Jelly Day so it's only fitting that I stumbled through this little creation (though it may already exist in the Pinterest world!)

I love myself a good PBJ. The reason? It's almost impossible to ruin!

My little man is 14 months right now. I've tried making him a sandwich a month or so ago by flattening the bread and smoothing on a thin layer of PB on one slice of bread and another thin layer of jelly on the other. When I go to cut it, it's one big mess that I prefer to not have him handle.

Today I was thinking about what I could make him for lunch as we're stuck in the mountains and have limited food. PBJ crossed my mind and I thought back to a pin I saw a few weeks ago, the Grilled Cheese Rolls. Why can't I do that with another comfort sammy?! 

I had wheat bread, grape jelly and crunchy peanut butter on hand and here was the process:

1. Cut the crust off the bread.


2. Flatten the bread. (I would have used a rolling pin if I had one, but a spatula worked just fine and the side of a clean fist would as well!)


3. Spread about an inch of peanut butter on the edge of the bread. (I made it heavy on about 1 inch and 'feathered' it out to the middle of the sandwich.)


4. Spread jelly on the rest of the bread. 



5. Start rolling on the jelly side. If you put too much jelly, it will be a little difficult to get a tight roll, but it's nothing to worry about! The peanut butter will 'seal' the outer edge to the bread. Making it kid friendly to handle.



If you start rolling on the peanut butter side, it will still work, but the jelly will ooze out the edge! Those ended up being mine!
